Good morning everyone--how are you doing today?I have had a long and frustrating night trying to learn how to do computer things that I am most certainly not good at. :) But other than that,we are good around here...screaming kids, crazy cat, raining outside...
So instead of complaining all about it, or day-dreaming about how nice sleep sounds (or a nap), I am instead telling you about the great big pot of wonderful that I have going in the crockpot right now.
As soon as the weather starts to get a little cooler, and the leaves fall from the trees, my family starts asking for chili for dinner.
And that makes my little heart happy because chili is about one of the easiest meals I make around here, it is always satisfying, and since I have won a couple chili contests with it, I know it will all get eaten up, with no leftover to sit lurking in the fridge.
I am busily getting the Ebook formatted and finished for the launch on Monday, October 15th (only. six.days.left. eek.), and wanted to give you a heads up on a few things.

And while you are doing that, I am going to go bang my head into the wall a couple times, wrestle a couple toddlers, and hopefully get everything figured out by noon so I can take a nap instead of doing dishes. Yeah. Like that is even a plan. LOL

Sweet and Sassy Chili from The Welcoming House
In a large crockpot, place the following:
2 onions, chopped
2 cloves of garlic, minced
one pint or two cans of dark red kidney beans
two pints or two cans of diced tomatoes with green chilies
3/4 lb browned ground beef
(I use oregano, basil and chili powder while cooking)
one Quart Jar spaghetti sauce
One pint jar or medium jar of salsa
1/2 cup brown sugar
2 Tbs olive oil
1 Tbs cinnamon
1 Tbs crushed red pepper flakes
Variation is adding ground turkey, a handful of dehydrated sweet corn, and a combination of black beans and small white navy beans. It makes for a colorful and beautiful meal, especially when served with a plate of cornbread that has green chilies and sweet corn baked into it. The recipe for my chili seasoning, and the master mix for the cornbread is included in my Ebook. :)
