Spiced Peach Jam----When Life is sweet, make Jam, Day Two

Today I am going to quickly share with you another of our very favorite jams around here,
Spiced Peach Jam.

If you have been reading my posts for a while, you know all about our distaste for wasting anything, and how last year we tackled 5 lugs of peaches and made it into a lot of different things.

Peaches start this weekend for this house, which seems so strange considering everything else is a month behind up here in MN, and I just finished my strawberry jams/syrups, which is normally a June adventure for me. :)

So here is a variation of my normal peach jam for you all to enjoy. If you want to learn how to make your own cinnamon extract instead of purchasing it, check out my post on making your own extracts.

Spiced Peach Jam
in a heavy stock pan, combine the following

8 cups diced peaches
4 cups sugar
2 Tbs lemon juice
2 Tbs Cinnamon Extract OR two cinnamon sticks

Bring to a simmer, mashing with a hand held potato masher or fork about 30 minutes into cooking. I simmer mine at about medium low, which allows plenty of time for the juice to develop and the peaches to soften. This is, again, a soft set gel that requires no pectin.

Cook until the peaches and sugar have reduced by 1/3. stirring occasionally and more frequently towards the end so that it does not scorch and stick. This takes about another hour.

To jar up, remove the cinnamon sticks. Fill your pint or jelly jars to the bottom thread, and wipe rim well. Cap and process in a waterbath for ten minutes.
